A new cookbook by edible Vancouver Island co-founder Dawn Postnikoff and well-known food writer Joanne Sasvari features signature chefs’ recipes from Vancouver Island and the Salish Sea.

Plenty of people talk about farm-to-table dining these days. But on Vancouver Island and the Gulf Islands and the Salish Sea, it’s a way of life,” writes Joanne Sasvari in the introduction to Island Eats, a new cookbook set to be released this fall.

As the opening line suggests, the cookbook features signature dishes from more than 40 of the region’s well-loved chefs, mixologists and food artisans, who all contribute to our flourishing food scene. The recipes range in complexity from challenging to no-nonsense, but they all take inspiration from their surroundings and an abundance of local and seasonal ingredients.

And while it’s pretty enough to top your coffee table, Vancouver Island Eats is best used as the excerpted recipes show; spattered, dog-eared and sticky in your kitchen.
