Bakers across the Lower Mainland have been anticipating the arrival of Flourist ’s brick and mortar location for some time now—as have we. Flourist has been an online supplier of its Canadian-grown, premium specialty flours, whole grains, and beans for a few years now, developing an extensive following. The new Commercial Street bakery will also serve as its milling centre. Unlike typical grocery store flours, where most or all of the germ is removed to ensure long life, Flourist uses an in-house stone mill to grind fresh flours, to order, that retain 100% of the grain. Besides an array of wheat, chickpea, einkorn, and other flours, the café provides myriad sweet treats and nourishing grain salads, homemade hummus made from Canadian chickpeas, and classic childhood favourites like Beans on Toast made with navy beans from Manitoba. The impressive flour mill, which really is quite something to see, takes pride of place in the airy, minimalist space that features warm Scandinavian touches and a cookbook bar to peruse while you sip your coffee. If you are not already baking sourdough, you might just be inspired to go home with a jar of their starter and give it a try. Or take the quicker route and buy one of their loaves fresh from the oven.
