Remembering Grandpa’s Pancakes

Ingredients

  • 1 1/2 cups whole wheat (or whole grain) flour
  • 1/2 cup wheat germ
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1 3/4 cup buttermilk
  • 2 eggs, whipped
  • 2 tablespoons vegetable oil (plus extra for pan)

Preparation

Sift together dry ingredients and create a well in the centre. In a separate bowl, crack the eggs and whip until well beaten. Add the rest of the wet ingredients to the eggs. Pour wet mixture into the centre of dry ingredients, and stir to combine. 

Heat a frying pan or griddle to medium-high heat. Add about 1 Tbsp vegetable oil, and cook pancakes one at a time, until bubbles form on the surface and the sides begin to crisp. Flip once, and cook for 2–3 minutes more. Serve hot.
