Sautéed mushrooms and peppers

This is a vegetable stir-fry dish that is super versatile and easy to make. Feel free to substitute button, oyster or any kind of seasonal mushrooms. It pairs well with rice and protein dishes as it is lighter in flavours. Mushrooms are awesome to work with and incorporate into your diet. If you want a heartier and fragrant dish, substitute the vegetable oil with butter.

Preparation

¼ pound of king oyster mushrooms, chopped into 1-inch pieces
1 medium-sized bell pepper, seeded and sliced into 1½- inch pieces
1 tablespoon butter or olive oil
2 cloves garlic, thinly sliced
Salt and black pepper, to taste

Heat the oil or butter in a wok over medium-high heat. Add the garlic and fry for 30 seconds. Add the mushrooms and cook until golden brown. Add the bell pepper, turn the heat up to high and stir-fry for 2 minutes. Add the salt and black pepper to taste and serve immediately.
