Ingredients
- 4 cups fruit, such as strawberries, mango, blueberries, rhubarb
- 1 cup sugar or honey
- 6 to 7 cups filtered water
- 2 sprigs herbs
- 1/2 cup whey
Instructions
In a medium pot, add the fruit and sugar. Cook until the fruit is soft and the sugar is fully dissolved. Strain the fruit juice through a sieve into a clean mixing bowl. The reserved fruit pulp can be used for other recipes.
Once the juice has cooled, pour it into a clean glass container. Add the water and whey and secure with a lid. Let the container sit, at room temperature, for four to six days or until you see the liquid getting bubbly.
Transfer the liquid to another clean container and add the herbs. Refrigerate for another 2 to 3 days.
To serve, pour the soda over ice and add a sprig or two of herbs for garnish.
