Potato and caramelized onion soup

This recipe is like a heartier version of a French onion soup without having to add bread.
Course Soup
Servings 4 cups

Ingredients
  

  • 2 cups Russet potatoes, peeled and diced
  • 6 cups stock or water
  • 1 cup Caramelized onions, split
  • 2 cloves garlic, sliced thin
  • ½ teaspoon thyme
  • Salt and pepper

Instructions
 

  • Place the diced potatoes, garlic, thyme and stock into a pot with a good pinch of salt. Cook over medium heat until the potatoes are fork tender. Turn off the heat and add ½ cup of caramelized onions.
  • Add the contents of the pot into a blender or food processor and blend until smooth. Return the soup to the pot and stir in the remainder of the caramelized onions. Adjust the seasoning with salt and pepper.
  • To serve, warm the soup and serve garnished with a pinch of caramelized onions and chopped thyme.
