Rarely peeled, with small stones that slip simply from their flesh with a single cut of the knife, their sweet-tart flavour and their snacking-suitable size make apricots a summer favourite. Apricots are among the first of the stone fruits to arrive in July. Seek out apricots with rosy, golden colour and fruit that yields to slight pressure.
