Plum Salsa with honey and jalapeño

This salsa works equally brilliantly with grilled meats or a bowl of tortilla chips. Taste your plums first and add more or less jalapeño as the sweetness of your plums and your tolerance for heat allows. We’ve used a mixture of black and red but in the height of the season, seek out sweet Greengages, rosy Mirabelles or sour Shiro plums and experiment with completely different flavours.

Ingredients

  • 6 plums, mixed varieties, stones removed
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/2 jalapeno pepper, veins and seeds removed
  • 1 small red onion, finely diced
  • 4 tablespoons cilantro, finely chopped
  • Pinch of cayenne (optional)
  • Salt to taste

Instructions

Mix vinegar and honey together in a small jar and set aside. Combine the jalapeño and red onion in a large bowl. Dice the plums and add to the bowl and combine well while pouring over the honey vinegar mixture. Add chopped cilantro and mix well. Season with a pinch of salt and, if desired, add a pinch of cayenne for extra kick.
